We're totally avoiding turning on the stoves in our apartments right now if possible. Somehow, the window air units just can't keep up with how quickly a kitchen heats up when the stove is on. Yikes! Here are some no-cook options we go back to over and over.
CHEESE PLATES: We love goat cheese with fruit, veggies, crisps, or crackers. The cool food is so refreshing and the prepping is so quick and easy.
CROCK POT DINNERS: Throwing a bunch of summer veggies into a broth or coconut milk can turn into the perfect hearty soup you want, but don't want simmering on the stove. We also love beef or chicken with a few side veggies. The bonus here is leftovers and even less required cooking!
SALADS: We're huge fans of egg salad, chicken salad, tuna salad plus the usual green salads or a fruit salad. Again, they're cold and require no cooking! You can add berries and nuts, hummus, avocados, or even sliced lunch meat. Its light but still packs a protein punch.
SNACKS: Frozen blueberries are a new fave. You can literally eat them right out of the freezer. Kimchi is also great on tortilla chips, and keeps in the fridge for ages. Lastly, you can't go wrong with a stash of hummus or guacamole in the fridge. If you're interested in a recipe, comment below and we'll post that for you. Not to brag, but guac is a staple for both of us, so we've totally perfected it!
DATE NIGHTS: Pick one night and go out to eat with someone great. Avoid the heat by soaking up air conditioning you aren't paying for.
